I left like such a housewife today! Finally I had a full day off and this is what I did all day:
My day started off with me making a large batch of plain & chocolate chip pancakes with some bacon (some of which I candied) and spinach and cheese scrambled eggs for everyone - all of which was delicious! :) Next I spent quite a few hours cleaning my entire house top to bottom as well as doing some laundry. Then it was time to go to Mass and I was scheduled to read - yes, we have a later Mass on Sundays and it is mainly hosted by youth.
Right after that I started making dinner - Creamy Chicken and Vegetable Lasagna - and let me tell you, it was to die for!! <3 It's funny because I made traditional Ground Beef and Tomatoe lasagna the other day and thought of doubling the quantities so that I could make two lasagnas instead - one for that night's dinner and the other one for me to freeze and have another night where I'd have less time to prepare dinner. I did end up making 2 very generous portions of lasagna and I still had quite a few ingredients left over but not quite enough meat to make a third lasagna. Instead I decided that I would use the meat and cheese separately the next day and make some tacos and/or burritos. However, I still had a ridiculous amount of cooked lasagna noodles left and had no idea what to do with them. Until today, that is, when I decided to do a different kind of lasagna. And as ridiculous as it may sound, even after 3 lasagnas, I still have a large amount of cooked lasagna noodles left. So since I still had some chicken and creamy sauce left from tonight's Chicken lasagna, I decided to cut some of the cooked lasagna noodles into thin strips (like linguini), add the creamy sauce to it and pack it all up in a Tupperware for me to take to work tomorrow for lunch with some chicken on the side. And yes, I do still have lasagna noodles left over and I don't when know what else I could possibly do with them. I feel like I am not going to want to even see pasta - especially lasagna - for quite a while after this.
Lastly, since my boyfriend did pass by for dinner but missed having breakfast with us, I packed him some pancakes and strawberries and blueberries separately for him to enjoy with his pancakes tommorrow morning during his early shift. Speaking of early shifts, I should really go now as I also have an early shift tomorrow!
